Wash the bitter melon, remove the head and tail, remove the flesh and cut into sections;

Wash lotus seeds and red kidney beans and cook them. If you have red peanuts at home, you can replace red kidney beans;

Cook lotus seeds, red kidney beans or peanuts in a pressure cooker for 50 minutes in advance and cook them for later use;

Add a spoonful of coconut oil to the pot, fry the bitter gourd until the skin shrinks, and add drained mushrooms to fry over low heat to bring out the aroma. Then add a bowl of lotus seeds and red kidney beans, add two bowls of water, and simmer for 10 minutes;
After ten minutes, start seasoning, add a little salt and organic vegetarian oyster sauce, and simmer over low heat for 20 minutes.
